Ingredients

For the Lava Cakes
  • 6 Tablespoon unsalted butter cut into pieces
  • 4 oz semi-sweet chocolate bar broken into pieces
  • 1 large egg
  • 1 egg yolk from a large egg
  • 3 Tablespoons white sugar
  • ½ teaspoon vanilla extract
  • 3 Tablespoons all-purpose flour
  • 1 pinch of salt
For Serving
  • fresh whipped cream
  • fresh berries
  • powdered sugar

Equipment

  • Air Fryer
  • 6-ounce ramekins
  • Electric mixer
  • Microwave-safe bowl

Method

  1. Grease three 6-ounce ramekins and set them aside.
  2. In a microwave-safe bowl, melt the butter and chocolate in 30-second intervals, stirring between each, until completely smooth.
  3. In a separate large bowl, use an electric beater to mix the egg, egg yolk, vanilla extract, and sugar until well blended.
  4. Add the flour, melted chocolate mixture, and a pinch of salt to the egg mixture, stirring until just combined. Pour the batter into the prepared ramekins, filling each about halfway.
  5. Place the ramekins in the air fryer basket and cook at 370°F (188°C) for 7-10 minutes. A shorter time creates a runnier molten center, while a longer time makes it firmer.
  6. Carefully remove the hot ramekins and let them cool for 1 minute. Run a butter knife around the edges to loosen the cakes, then invert them onto plates to serve immediately with your favorite toppings.

Notes

The key to the perfect molten center is the cooking time. For a runnier, more 'lava-like' core, aim for the shorter end of the 7-10 minute range. For a firmer, more cake-like center, cook for the full 10 minutes.
